Laboratory Analysis:
I
worked with seven different grape cultivars and found that the cultivars contained about the same concentration of component levels reported as catechin equivalents in the extracted oil (ppm). Of the red grapes, Pinot Noir contained the highest level of polyphenols. Of the white cultivars, Riesling contained the next highest level of polyphenols. An HPLC system was used to analyze the polyphenolic compounds.

| The significant differences in the levels of the various components between the seven cultivars can be used to advantage. An understanding of the importance of these levels becomes an issue not so much in the extraction process developed in the paper as much as to the nutraceutical value of the product. Through blending, much like in the wine industry, one can develop a blend that is reproducible from batch to batch. |

At 77.72%, grape seed oil contains a significant level of linoleic fatty acid. It is one of the essential fatty acids necessary for humans. Humans are not able to synthesize it, and therefore must get it either in food or as a supplement. Grape seed oil has the highest level of linoleic of any oil extract in the plant kingdom.
